1. Preheat over to 375°. Slice tops off peppers. Clean out seeds and inner membrane. Place on a baking sheet.

2. Heat olive oil in a pan; add the vegetarian meat crumbles and sauté until heated through; add the rice, tomatoes, corn and ⅓ of the marinara sauce. Season with pepper and garlic powder. Remove from stove and stir in the cheese. Stuff equal amounts of the crumble mixture into the peppers and top with remaining marinara sauce. Cook in oven until peppers are tender about 30 minutes.

3. Toss lettuce, carrots, cucumbers, mushrooms and sprouts together in a bowl. Drizzle with salad dressing.

4. Serve salad alongside the stuffed peppers.
