1. Wash and chop onion (peeled) and green pepper; set aside.

2. In a medium saucepan, cook ground turkey breast in olive oil.

3. When nearly cooked through, add the chopped onion and green pepper; sauté until tender.

4. Add tomatoes, kidney beans (undrained), corn, jalapeños (chopped), chili powder, and cajun spice; stir to combine.

5. Cover and reduce heat to low and simmer for 30 minutes, stirring occasionally and adding water if necessary to maintain stew consistency.

6. Garnish with shredded cheese and sour cream.

7. Serve with whole wheat roll and margarine, and a glass of cold milk.

8. Enjoy a fresh, peeled orange for dessert.
