1. Heat non-stick pan to medium-high heat.

2. Brush olive oil on one slice of bread. Place oil side down and top with tomato, basil and cheese. Cover with remaining half and brush with remaining olive oil.

3. Place in pan and grill until until both sides are golden brown and cheese has melted.

4. Enjoy with baby carrots and honey mustard for dipping.
