1. In a stock pot, heat oil over medium heat.

2. Sauté onion, peppers and garlic for 5-7 minutes.  Add water, beans, tomatoes and all herbs and spices. Cover.

3. Simmer for approximately 20-25 minutes or until beans are tender and liquid thickens slightly.

4. Pour into bowl and sprinkle with shredded cheddar cheese.  Serve with crackers on the side.
