1. Wash sweet potato, pierce several times with a fork, wrap in a paper towel, and microwave on high setting until soft, turning over once after 1 minute.

2. Remove peel and place flesh in a small bowl and drizzle with canola oil; mash with a fork until smooth. Set aside.

3. Heat a non-stick skillet lightly coated with cooking spray over medium-high heat; cook egg substitute until set, stirring frequently.

4. Place cooked egg down the center of the tortilla; sprinkle with cheese.

5. Spoon mashed sweet potato, hummus and salsa over cooked egg and cheese; roll up and enjoy for a decidedly different breakfast.
