1. Heat olive oil in a non-stick pan. Sauté the onions and mushrooms. When tender remove from heat and transfer to a bowl. Stir in the rice, bread crumbs, nuts, egg substitute, pepper and cayenne pepper. Form into a patty and grill or place under heated broiler for approx 5-6 minutes. Place burger on roll and serve with lettuce and tomato.

2. Top yogurt with blueberries and sprinkle with pecans for dessert.

3. Serve sandwich with your favorite calorie-free beverage.
