1. Wash and chop onion (peeled) and green pepper.

2. Heat a nonstick skillet lightly sprayed with cooking spray over medium-high heat.

3. Sauté onion and pepper, stirring often.

4. Meanwhile, whisk together egg substitute and milk with a fork in a small bowl.

5. Add to skillet and stir constantly, cooking until egg is done.

6. Remove from heat and place on a serving plate; sprinkle with shredded cheese and black pepper to taste

7. Toast bread and spread with margarine. Serve scrambled egg and toast with a fresh orange.
