1. Grate potato and onion and place in a strainer. Squeeze out any excess liquid. Place in a bowl and mix with egg substitute, flour, salt and pepper.

2. Heat olive oil in a non-stick skillet to medium heat.

3. Mold potato/onion mixture into medium sized patties. Place in hot skillet and cook until each side is golden brown. When ready to serve; enjoy with applesauce.

4. Toss together the greens, quartered tomatoes and cucumbers. Top with feta and salad dressing.

5. Complement meal with strawberries topped with whipped topping.
