1. In a sauté pan add a ½ tsp. of the olive oil over medium heat.

2. Add the onions and sauté on medium-high for 4-5 minutes.  Turn down the heat and cook the onions for 5 minutes or until they become brown and caramelized.  Stir the onions often so they don't burn and evenly cook.

3. Add the jalapenos, green onions, carrots, garlic and celery and cook for 5 more minutes so the garlic browns slightly.

4. In a large bowl combine the beans and sauteed mixture.

5. In another small bowl combine remaining olive oil, lemon juice, and all spices and herbs - may add a dash of cayenne pepper if desired.  Pour this dressing over beans and vegetables and evenly mix together. Once ingredients are evenly mixed, chill black bean salad until ready to serve.

6. Serve black bean salad with cooked chicken breast.
