1. Whisk together egg substitute and pepper in a medium bowl with a fork or wire whisk until well mixed. Stir in cheese (shredded); set aside.

2. Wash and chop mushrooms, bell pepper and onion. Heat oil in a small, ovenproof skillet over medium heat.

3. Cook mushroom, bell pepper and onion in oil, stirring occasionally, until tender. Pour egg mixture over mushroom mixture.

4. Cover and cook over medium-low heat for 3 to 5 minutes or until eggs are set and light brown on bottom.

5. Set oven control to broil. Broil frittata with top 4 to 6 inches from heat for about 2 minutes or until golden brown.

6. Serve with whole wheat toast spread with margarine and fruit preserves, and a fresh peach (or nectarine).
