1. Preheat oven to 325°F.

2. Combine all the vegetables, spices and herbs in a bowl. Add the olive oil to the vegetables. You may also season with a dash of cayenne and/or red pepper flakes to taste, if desired.

3. Mix until the vegetables are coated evenly in the oil and spice. Place the vegetables on a sheet tray coated with cooking spray. Roast the vegetables for 20-30 minutes until they are golden brown and slightly crispy.

4. For sandwich, layer bread with cheese and ham. Serve with vegetables on the side.
