1. Make the green sauce: preheat oven to 450°F. Toss together all the ingredients, except the cilantro, on a baking sheet. Bake until the tomatillos begin to char and breakdown, about 30 minutes. Let cool. Transfer the cooked sauce to a blender and blend until smooth. Stir in the cilantro and set aside.

2. Make the lime yogurt. In a bowl, whisk together all the ingredients with 1⁄4 cup cold water. Set aside.

3. Make the enchiladas: wrap the tortillas in a moistened tea towel and microwave for 45 seconds, or until they’re warmed through. Dip tortillas into the green sauce, generously coating both sides. Fill each with 1⁄4 cup of chicken and 2 tablespoons of feta cheese, roll up, and transfer to a large serving platter. Sprinkle the remaining cheese, red onions, and cilantro across the enchiladas and serve with the lime yogurt and any remaining green sauce.
