1. Wash and chop tomato.

2. Heat a non-stick skillet lighly coated with non-stick cooking spray over medium-high heat.

3. Add tomato to skillet and sauté for 2 to 3 minutes.

4. Add egg substitute and continue to cook, stirring constantly, until egg is just set.

5. Remove from heat and gently stir in feta cheese.

6. Meanwhile, toast bread and spread with margarine and jelly.

7. Serve egg and toast with orange juice.
