1. Lightly toast English muffin if you prefer.

2. Beat egg substitute with a fork. Heat a small, nonstick pan lightly coated with cooking spray over medium heat.  Pour the egg into the pan. Let set and flip over to finish cooking.

4. Serve with a side of apples and peanut butter.
