Denver Style Potato Skillet with Turkey Ham

1. Cut potato into quarters. Place in a pot of water and bring to a boil. Cook until tender, remove from heat and drain.
2. Heat olive oil in a sauté pan. Add peppers and sauté until bright in color and crisp. Remove from heat, keeping warm.
3. Add turkey ham and potatoes to pan, cook until warmed through. Add vegetables back to pan and cook for an additional minute. Sprinkle with cheese prior to serving.
4. Complement meal with yogurt for a snack.
