1. Heat oil over medium-high heat in a large saucepan; add rice and garlic; cook, stirring, until rice is lightly toasted, about 1-½ minutes.

2. Add curry powder to saucepan and cook, stirring, until fragrant.

3. Add 2 cups of water to saucepan, and cook according to package directions, adding more water if necessary.

4. Cook time will vary according to the variety of rice used. About 5 minutes before rice is done, stir in lentils (drained), ginger (grated) and salt.

5. Continue to cook, stirring occasionally, until rice is tender, adding more water if mixture becomes too dry.

6. Serve in shallow bowls, and garnish with chopped green onions.
