1. Heat oil in skillet over medium-high heat and sauté onion until tender.

2. Add egg whites and cilantro to skillet and continue to cook, stirring, until egg is set.

3. Remove from heat and place cooked egg mixture down the center of a warmed tortilla; sprinkle with cheese, and top with salsa.

4. Roll up tortilla and serve immediately.
