PLEASE NOTE: This recipe requires 4-6 hours of marinating that is not reflected in the prep time.

1. Combine ⅛ tsp. of pepper, mustard, Bourbon, soy sauce, 2 tsp. of brown sugar, ketchup and Worcestershire sauce in a small bowl. Place pork in marinade and refrigerate for 4-6 hours.

2. Preheat oven to 325°F.

3. Remove pork from marinade and place on a baking sheet. Bake for 20 minutes or until done.

4. Combine sweet potatoes with onion, red pepper, garlic, parsley, salt, remaining pepper, paprika, and 1 tsp. of olive oil. Place mixture on a cookie sheet and bake for 25-30 minutes until tender.

5. For salad, toss zucchini with vinegar, 2 tsp. of brown sugar, tomatoes, green onion, 1 tsp. olive oil, and pepper to taste.

6. Serve pork with a side of sweet potatoes and salad.

⅛ tsp paprika

2 tsp extra virgin olive oil

¾ cup squash, yellow zucchini

1 tsp red wine vinegar

⅓ cup tomato, chopped

1 tbsp onion, green, chopped
