1. Peel and chop onion; peel and mince garlic. Drain, rinse and mash black beans. Chop jalapeños.

2. Heat oil in a large skillet over medium-high heat. Cook onion and garlic in skillet about 5 minutes, stirring occasionally, until onion is tender but not brown.

3. Add mashed beans and chopped jalapeños to the skillet and stir to combine. Continue cooking until heated through.

4. Place one-quarter of the bean mixture down the center of each tortilla. Top with shredded cheese and tomato, chopped, dividing evenly among the 4 tortillas.

5. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over the folded end, overlapping. Fold remaining end down. Place seam side down on serving plates.
