1. Wash and dry lettuce leaves well. Set aside.

2. Prepare egg roll per package directions

3. Cut tofu into small bite-sized pieces. Toss with 1/4 teaspoon sesame oil, green onions, ginger, garlic, soy and vinegar. Marinate for 10-15 minutes.

4. Heat remaining 1/2 teaspoon of the sesame oil in a skillet to medium heat. Add marinated tofu; sauté until tofu begins to brown about 10 minutes. Chop waterchestnuts finely. Add to skillet and continue to stir until well combined.

5. Remove from heat and place in a bowl. Enjoy tofu mixture wrapped in lettuce leaves. Dip or drizzle with dressing. Serve with a side of brown rice and prepared egg roll.

6. Complement meal with mandarin oranges for dessert.
