Ingredients

  • 4 cups Roma (plum) tomatoes, seeded and diced
  • 2 tablespoons cilantro, fresh, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon minced jalapeno pepper
  • 1 green onion, minced
  • 1 garlic clove, minced
  • 1/2 teaspoon salt

Preparation

  • in a small non-metal bowl, combine all ingredients
  • cover and refrigerate for at least 1 hour to blend flavors, or up to 3 days
