Prepare this delicious healthy caesar salad and enjoy it by itself, or add sweet peppers and grilled chicken.

Ingredients

  • 2 recipes caesar salad (recipe follows)
  • 1 pound boneless, skinless chicken breasts, trimmed of fat
  • 2 roasted red sweet peppers, cored, seeded, and cut into strips

Preparation

  • prepare a double batch of dressing for caesar salad. Place half of dressing in small bowl and refrigerate until needed
  • place remaining dressing in large bowl, add chicken, and marinate in refrigerator for 1 hour. Bring to room temperature
  • lightly coat gas or charcoal grill grate with grilling spray, and heat to medium-high
  • remove chicken from marinade. Grill chicken, basting frequently with marinade, for 5 to 10 minutes per side, or until no longer pink in center when tested with sharp knife
  • slice into 1/2-inch strips. Discard any remaining marinade
  • transfer reserved salad dressing to blender and process for 15 seconds
  • prepare salad as directed, and top with the peppers and chicken
  • serve with 2 crisp breadsticks (1g fat)


caesar salad

Ingredients

  • 1 1/2 teaspoons balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon anchovy paste
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon worcestershire sauce
  • 1/4 cup fat-free cottage cheese
  • 1/4 cup light (1%) milk
  • 2 1/2 tablespoons grated Parmesan cheese
  • 1 head romaine lettuce
  • 1 pint cherry tomatoes, halved
  • 1/2 cup plain low-fat croutons

Preparation

dressing:

  • in a blender or food processor, combine vinegar, lemon juice, garlic, anchovy paste, mustard, and worcestershire sauce; process until blended
  • add cottage cheese, milk, and 1 tablespoon Parmesan cheese. Process until dressing is smooth and creamy

salad:

  • coarsely chop lettuce; add tomatoes, croutons, and dressing
  • toss to combine
  • sprinkle with Parmesan cheese
